BBQ plum chicken wings with brown rice salad recipe

Perfect BBQ Chicken Recipe!

Ingredients:

  • 1kg BBQ plum marinated chicken wing piecesBBQ plum chicken wings with brown rice salad
  • 2 cups brown rice
  • 2 1/2 cups (625ml) water
  • 1 chicken stock cube, crumbled
  • 1 zucchini, diced
  • 420g can corn kernels, drained and rinsed
  • 2 shallots, finely sliced
  • 2 tsp grated ginger, grated
  • 2 tbs lemon juice
  • 2 tbs oil
  • 1 bunch fresh coriander, leaves picked

Preparation:

  1. Preheat oven to 200°C. Place the chicken wing pieces into a baking dish and bake for 50 minutes or until crisp.
  2. Wash the rice until water runs clear. Place the rice, water and stock cube in a saucepan, bring to the boil, reduce heat to low and simmer for 25 mins or until the rice has absorbed all of the liquid. Leave the rice to steam in its own heat for another 10 minutes, do not lift the lid.
  3. Stir through the zucchini, corn kernels, shallots and ginger. Cover and allow to steam in its own heat for a few minutes. Stir through lemon juice, oil and coriander. Season to taste with salt and pepper. Serve the rice salad with the chicken wing pieces.
